High-Protein Tofu Scramble

(2-3 servings ~ 15-20 g protein)

INGREDIENTS:
1 block extra firm tofu
1/4 onion, chopped
1/2 bell pepper, chopped
1-2 handfuls spinach, fresh or frozen
2 tsp salt
1 tsp black pepper
1 tsp turmeric
1 tsp chili flakes
2 tbsp nutritional yeast
Oil as needed
DIRECTIONS:
Heat up non-stick pan with a bit of oil. Sauté onions and peppers until soft.
Press tofu to release water, the n crumble into pan with veggies.
Add in all spices. Mix and adjust to your preferences.
Stir in spinach - add as much as you’d like, it’ll reduce like crazy.
Serve with avocado, salsa, toast, tortillas, etc. & enjoy!
TIP: if you don’t like certain ingredients or don’t have specific spices, replace with another with a similar taste (EX: Garam masala, garlic powder, paprika, etc.)
